Assam Fish Soup (阿参鱼汤)

Assam Fish Soup

Ingredients
-> 1.5 kg Ikan Kembong
-> 6 stalks serai (lemon grass)
-> 5 red chili
-> 10 chili padi
-> 1 tsp ikan bilis powder
-> 3000 ml water

Condiment
-> 6 assam keping
-> 100 gm assam jawa (mixed with 500 ml water)
-> 1 tbsp sugar
-> salt and chicken stock (to taste)

Method
-> Boil water in a pot
-> Add in the serai, red chili, chili padi, assam keping and sieved assam juice
-> Cover the pot and allow the mixture to boil for 20 minutes
-> Add in salt, chicken stock to taste
-> Add in ikan bilis powder, sugar and ikan kembong, allow to boil until fish is cooked




阿参鱼汤

成分
-> 1.5公斤甘望鱼
-> 6支香茅
-> 5红辣椒
-> 10指天椒
-> 1茶匙江鱼仔
->  3000毫升的水

调味料
-> 6片阿参片
-> 100阿参膏用500毫升水混合
-> 1汤匙糖
-> 盐和鸡精粉(适量)

做法
-> 把阿参膏和500毫升的水搅拌均匀,过滤,形成阿参膏汁
-> 把3000毫升的水煲滚,加入香茅,红辣椒,指天椒,阿参片和阿参膏汁
-> 加上盖,熬煮20分钟
-> 加入适量的盐和鸡精粉
-> 加入江鱼仔粉,糖和甘望鱼,煮至鱼熟
